Today we are preparing a duck for a festive New Year's table with apples in a special orange marinade with delicious orange sauce.


  • 115 g freshly squeezed orange juice
  • 100 g soy sauce
  • 30 g ginger
  • 2 tbsp. lies. honey
  • 1 st. lies. orange peel

  • 2 h. Lodge. dried garlic
  • ½ h. Lodge. ground black pepper
  • 1 tbsp. lies. honey
  • ¼ h. Lodge. cinnamon

  • 8-10 st. lies. juice and fat from duck
  • 170 g freshly squeezed orange juice
  • 1 PC. Orange pulp
  • 1-2 h. Lodge. starch
  • 1-2 tbsp. lies. honey
  • 1 tbsp. lies. Lemon juice
  • 50 ml of water
  • pinch of cinnamon

Cooking process:

We will cook the duck in 2 stages. The first is to marinate the bird within 24 hours. To do this, you need to: rinse well, clean from all feathers, hairs, cut off the terminal phalanges of the wings, the neck can be stopped.

An important part is that the sebaceous glands must be cut off from the duck's tail without fail.

We prepare the marinade itself, for this we need to take freshly squeezed orange juice, soy sauce, honey, orange zest and ginger grated on a fine grater.

Please note that the zest must be removed carefully, not reaching the white layer of orange pulp.

We mix all the ingredients in a bowl, we get a fragrant and sweet and salty, very tasty duck marinade. About marinated in such a marinade, it will be very tender and soft.

For the filling, cut the apples into quarters, remove the cores, add a little cinnamon and one tablespoon of honey, mix well.

Fill the insides with cooked apples, tighten the duck cut with wooden skewers.

Close the baking sheet with foil on top, put in the oven preheated to 180 degrees.

After an hour and a half, we take out the baking sheet from the oven, remove the top foil, pour the entire surface of the duck with the released juice.

Pour a little (8-10 tablespoons) from a baking sheet into a small bowl of the duck fat released during frying to make the sauce.

Cover with foil again, put in the oven for another half hour. More accurate time, you need to determine by the size of your duck, the power of the oven.

Cooking the sauce

For him, the orange needs to be peeled, take only the pulp itself, clearing each slice of all films.

Mix all ingredients except orange, starch and water in a saucepan. We put on fire, stir well, bring to a boil.

We take out the browned duck from the oven, remove the pieces of foil from the paws and wings. We check with a toothpick for readiness, the juice that has been released should be transparent. Now you need to give it a rest, close it on top with a piece of foil and leave it for 15 minutes.

Cut into thin plastics, pour over the sauce. You can decorate with vegetables. The meat is tender, aromatic and very tasty.
