Not having been modified in its characteristics, (like today's grains, originally obtained with the genetic laboratory method in the early 1970s), it is of low productivity because of very high straw with a slender development, heavy ears of large grains, therefore with easy enticement in late spring. This reason affects the harvest and, in the past, cultivation was abandoned.
Like ancient grains, it has superior organoleptic qualities and a lower gluten content.
Our wheat is grown without the aid of chemical fertilization with nitrates and herbicides.
Its agrarian rotation is inserted in a cultivation cycle with grass mixed with legumes, (which enriches the soil with nitrogen in a natural way) and offers the possibility of growing weed seeds.
